For Christmas, they wanted to make a chai at Amba that was less spicy. So they omitted the cilantro, fennel, pepper, and chili and mix their BOP with a smooth combination of cinnamon, cloves, and ginger. This sweeter chai tastes like “Christmas-in-a-cup” and is also perfect to use as hot chai or silky smooth iced tea.
You can pour this tea several times.

Amba Estate is an organic farm in the Uva Highlands of Sri Lanka. The farm is about a 30-minute drive from Ella, located in a small valley above the Ravana-Ella waterfalls, with views of Ella Rock and Lipton’s Seat. At Amba, they produce a range of artisan teas, coffee, spices, and preserves. They partner with the local community to support a variety of educational, economic, and environmental initiatives. (10% of Amba’s turnover goes to the employees).
When in Sri Lanka you can stay overnight in the old tea bungalows on the estate, learn more about organic farming and artisan tea, and enjoy our little corner of paradise. This is definitely recommended, we really enjoyed this oasis of peace.
