We sell freshly roasted coffee beans in our Dave’s Koffiebranderij webshop. But you might be wondering what does that mean? After all, coffee is also sold in the supermarket. We roast the coffee beans ourselves. That is why our packaging also has a roasting date. The roasting date is the day on which the coffee is roasted by us.

How long can you store roasted coffee?
We believe that it is best to use the coffee within 6 weeks after roasting for an optimal taste experience. You can keep the coffee longer. But the taste of the coffee does deteriorate. We have a shelf life of 6 months.

Coffee can be too fresh.
When coffee is roasted, gases are built up in the bean. After roasting, these gases (mainly carbon dioxide) start to seep out. In the first few days after roasting, a large part of the CO2 formed leaves the beans. Coffee needs to rest a bit after roasting, the bean has expanded and gases have built up inside the bean they have to settle first. As we now roast on a Hot Air roaster, we have the idea that the resting will take longer. Some coffees start tasting only after 7 days the way we want them to taste. When you buy online we often indicate the coffee is still too fresh to drink and will ask you to be patient. (oh we know how difficult this can be.)
When can I use the coffee?
Every coffee and roast has a different degassing. It can take 2 to 12 days before the coffee is good to use. For convenience, keep about 5 to 7 days after the roast date.

- Dark beans usually degas faster than light roasted beans.
Ground coffee is aging faster.
When you buy already pre-grinded coffee, degassing goes faster. But not in the desired way. The finer the coffee is ground, the higher the volume of gas released. You also accelerate the oxidation process by exposing the coffee to oxygen. The coffee quickly goes stale after grinding.
Fresh coffee and degassing.
The fresher the coffee, the more degassing you will experience while brewing the coffee. With filter coffee, you first have to let the coffee “bloom” to release the CO2 from the coffee. You do this by first wetting the coffee. Then wait about 30 seconds before pouring the rest of the water. You will see that the coffee will bubble, this bubble is the “blooming”. If the coffee is too fresh, the extraction will still be uneven. This is due to a large amount of CO2 that has escaped during brewing. Taste the difference.
When you really want to know the difference, then put it to the test. Take a coffee that has just been roasted and a coffee that is 5 days old, for example, and make coffee with it. Use the same coffee, so you can taste the differences well. This way you experience how old the coffee you like best should be
Oxidation in the freshly roasted coffee beans.
Freshly roasted coffee gets better with time. After the first few days of degassing, oxygen begins to penetrate into the coffee beans. This is also known as oxidation and is the main reason that coffee will taste old.
How do you store freshly roasted coffee?
We pack our coffee in coffee bags with a one-way valve. It is recommended to store the coffee in cans with a one-way valve, this seal even better. Here you will find our CoffeeVac cans. The advantage of these cans is that the CO2 can escape from the coffee, but no oxygen can come in.
Where do you store your freshly roasted coffee?
Store coffee in a dark cool place. Do not put this in the refrigerator. You also store other products here and the chance that the coffee will taste like this is certainly present. A wine cabinet is nice, but not everyone has one at home. Coffee can be put in the freezer, but make sure that no moisture can get into it. Beans are porous, can absorb water and burst. If you keep coffee in the freezer, make sure the beans have thawed before you use them.
